Eden Foods Agar Agar Flakes are a powerful and all-natural easy-to-use seaweed gelatin substitute with superior thickening properties. Perfect for use in homemade custards, fruit jellies, pie fillings as well as numerous other culinary creations.
Referred to as ‘kanten’ in Japan, these flakes are purified from eight carefully selected varieties of edible wild sea vegetables from the Gracilaria and Gelidium species.
They are harvested from cool temperature autumn seas and then left to sundry through to winter. They are then delicately transported up mountain rangers, where they are gently boiled in water for several hours. This extracts the agar and removes any unwanted and plant material. This thickened mixture is cut neatly into bars that are suspended on bamboo mats in snow-covered rice fields to freeze and thaw for ten days till what is left is a completely natural, pure seaweed gelatin.

How to use Agar Agar flakes in cooking?
If you wish to create a firm gel using Eden Agar Agar flakes, such as in jello or fruit salads, use 1 and 1/2 tablespoons of agar-agar flakes per cup of liquid of choice, such as tea, juice or stock. If a softer jelly texture is desired use only 1 tablespoon of flakes per cup of water.
For use in thickening pie fillings make sure to first soak the flakes in a 1/4 cup of water for 20 minutes, and only then simmer the flakes till they are half dissolved. Then add pie filling ingredients or soymilk and continue cooking for at least another 20 minutes.
