Looking for some easy snacking options to help you make it through the day? Say yes to bacon! Carrot bacon that is. Easy to bake ahead of time and snack on throughout the day, you can use carrot bacon to top sandwiches and burgers. These flavorful and crisp snacks make the perfect poppable mid-day bite for when you get those crunchy cravings. So enjoy yourself and bite into crispy carrot bacon.
Serving size: ½ cup
3 tbsp soy sauce or tamari
2 tbsp olive oil
½ tbsp maple syrup
¼ tsp paprika
½ tbsp garlic powder
2 large carrots, peeled
Whisk together soy sauce, olive oil, maple syrup, paprika, and garlic powder. Set aside the mixture in a bowl.
Use a vegetable peeler, peel the carrot from end to end to create bacon-like strips. Add the strips to the bowl with the marinade, and allow to marinate for at least 15 mins. The longer the better.
Preheat oven to 400F. Bake carrots on a lined baking sheet for 10-15 minutes flipping halfway through. Depending on your oven, definitely check on them every 5 mins in case they start to burn or be too well done.
