There are plenty of suggested so-called ‘ vegan egg alternatives such as plant-based yogurt or unsweetened apple sauce, but none of them have replicated the richness and bind that an egg can… not until now that is!

Try whisking 2 tablespoons with 120 ml of ice-cold water until smooth. Then heat a little vegan butter or oil to a pan until sizzling and add the mix, scrambling constantly for 8-10 minutes. Finish by seasoning and serving on top of your favourite fresh bread for scrambled ‘eggs’ on toast to be proud of.
